German Style Corn Beef Panini (or Vegetarian)

2 large   red apples

2 small   red onions

4 tbsp.   Olive Oil

8 oz.      Mediterranean Delights’ Sauerkraut Corn Relish Salad

8 slices   Marble rye bread

1 lb.       Sliced corned beef or tofu slices

8 slices   Swiss cheese

     Directions:

Preheat Panini grill to medium high.  Peel, core, and dice red apples into 1/8-inch pieces.  Peel and thinly slice red onions.  Sautee onion with 1 tbsp of the olive oil until transparent.  Add apples, cook until tender.  Add Sauerkraut Salad and cook 3 minutes.  Divide the cooked mixture four ways.  Assemble the paninis with corned beef or tofu slices, Swiss cheese, and the onion, apple & Sauerkraut mixture.  Brush Panini grill with olive oil and grill sandwich for 6 minutes. Serves 8

 

 

Mediterranean Reuben Tortilla

4 (8”)   Whole Wheat Tortillas

½ cup   Mediterranean Delights’ Roasted Red Pepper Hummus

4 oz.     Sliced turkey, tofu, pastrami or corned beef

4          slices Swiss cheese

1 cup    Mediterranean Delights’ Sauerkraut Corn Relish Salad

     Directions:

Spread each tortilla with 2 tbsp of hummus; top with 1 ounce of protein, 1 slice of cheese, and ¼ cup Sauerkraut Salad.  Roll the tortilla and serve warm or cold. Serves 4

 

 

Greek Wrap

1         Lavash Wrap or Tortilla Wrap

3oz.     Mediterranean Delights Hummus

3         Cucumber-julienne strips

2oz.     Diced Tomato

2oz.     Diced Red Onion

8         Greek Olives

2oz.     Feta Cheese

     Directions:

Assemble wrap using outlined ingredients.

 

 

Smoked Turkey & Chipotle Hummus Wrap

 

1          Flour Tortilla

4 oz.     Mediterranean Delights Chipotle Pepper Hummus

1/2       cup Jicama or Green Apple - julienne slices

1          cup Romaine Lettuce - Shredded

1/4       cup Salsa - your choice of heat

4          slices Smoked Turkey

     Directions:

Place a lettuce leaf on one edge of the tortilla, leaving a 1-1/2” margin. Place a few slices of the turkey on top of the lettuce, and then top the turkey with jicama (or green apple) strips, tomatoes, hummus and salsa. Repeat the layering, then tuck in the sides to enclose the filling and roll the wrappers firmly but gently,  beginning with the filled edge. Cut in half on diagonal, and serve.

 

 

Wheatberry, Cranberry Salad with Turkey and Roasted Garlic Hummus

 

1             Lavash Bread or Tortilla Wrap

3 oz.        Mediterranean Delights’ Roasted Garlic Hummus

4 oz.        Mediterranean Delights’ Wheatberry, Cranberry & Orzo Salad

3-4          Slices of Turkey Breast

1 cup       Romaine Lettuce – Shredded

     Directions:

Assemble wrap using outlined ingredients.
