Savory Sauerkraut Strudel

5 sheets   Phyllo dough

1 ½ cups  Mediterranean Delights’ Sauerkraut Corn Relish Salad

½ lb         Gruyere Cheese

8 spears   Asparagus OR Arugula Leaves

¼ cup      Butter, melted (can use olive oil)

Arugula Leaves

Aged Balsamic Vinegar reduction

     Directions:

Pre-heat oven to 475 degrees.  Unthaw phyllo dough and brush each with melted butter/oil around the edges and then through the center in the shape of the letter X.  Repeat and layer the 5 sheets together.  Mix Sauerkraut Salad, Gruyere cheese, and asparagus/ arugula.  Add half the mixture on one end of the dough and roll once.  Add the remaining mixture and roll again.  Seal with butter.  Bake until gold brown, about 30 minutes.  Serve over Arugula leaves and drizzle with balsamic reduction.  To prepare balsamic reduction, boil aged balsamic vinegar for 5 minutes or until syrup-like consistency.

 

 

Falafel Lasagna

12          Lasagna Noodles - Cooked

1            Large Zucchini - thinly sliced

3cups      Frozen Spinach - thawed & thoroughly drained

1lb.          Button Mushrooms - sliced

2lbs.        Falafel

15oz.       Ricotta Cheese

2cups      Mozzarella Cheese - Shredded

4cups      Marinara Sauce

     Directions:

1. Heat oven to 350 degrees. Spray a 9x13” baking dish.

2. Falafel Preparation: Crumble Falafel onto a baking sheet and bake for 1/2 hour at 350 degrees - until dark golden brown. Set aside and let cool.

3. Take a 1/4 cup of marinara sauce and thinly coat the bottom of the baking dish. Layer 4 lasagna   noodles, then another layer of sauce,   zucchini, spinach, mushrooms, falafel, ricotta cheese &    mozzarella cheese. (Be sure to save enough of each ingredient to repeat layers) When finished layering, top lasagna with shredded mozzarella. Bake for 30 minutes, or until thoroughly heated and bubbly. Let stand for 8 to 10 minutes before cutting and serving.

 

 

Grilled Vegetable Flatbread with Garlic Hummus & Goat Cheese

 

Grocery List:

Flat Bread

3 oz. Mediterranean Delights Certified Organic Garlic Hummus (or Flavor of your choice)

Grilled Red Peppers cut into strips

Grilled Onions

Grilled scallions

Blanched Green Beans

Grilled Eggplant

Grilled zucchini

Salt and Pepper

Black Olives

Goat Cheese

Fresh Basil

      To Serve:

Top flat bread with hummus. Arrange any or all vegetables on top of hummus. Season with salt and pepper. Place bread in oven at 425F and bake for 5 minutes to heat through. Remove and add black olives, goat cheese and fresh basil.
